Below is a list of ingredients that I use.

Organic untreated white flour: WHEAT (with added calcium carbonate, iron, niacin, thiamin)

Organic wholemeal WHEAT flour:

 

Organic Heritage Blend Stoneground Wholemeal WHEAT FLOUR: Milled from a unique blend of over 100 heritage wheat varieties grown at neighbouring Cotswold farms.

As in medieval times, this crop is genetically diverse and well adapted to local growing conditions. Resowing each year with farm-saved seeds preserves and enhances the crop's genetic diversity, making it hardier than modern, single variety crops and better able to adapt to climate change.

Organic Rye Grain is 2020 harvest organic grain grown at Home Farm, Wimpole, Cambridgeshire.

YQ (an abbreviation for Yield, Quality) is a diverse population wheat developed at Wakelyns Agroforestry. We grow this as it is the exact opposite of a monoculture.

Please be aware that all my sourdough is prepared in an environment where there are nuts, sesame seeds and dairy. If you have any food allergies or intolerance please speak to me before buying any sourdough.
